Salsa Chicken Recipe

 Servings: 6
Ingredients:
• 6 Chicken breasts
• 16 oz. jar of your favorite salsa
• 1/2 package Taco Seasoning

Directions: Thaw the chicken if needed. Trim off excess fat from the chicken. Rinse chicken and place chicken in crockpot. Sprinkle 1/2 package of taco seasoning onto chicken. Pour salsa over chicken. Cook on low in crock-pot 6 to 8 hours. You can leave chicken breasts whole or shred it while in crockpot and then let it cool for a bit. By shredding and letting it sit in there for a bit it’ll soak up the juices and be moister throughout the next few days.
The great thing with recipes like this are you can use the meat in multiple ways. Maybe you have whole wheat tortillas and all the sides to make chicken tacos. Maybe you throw the meat over some quinoa or mix it with a bunch of veggies for a stir fry. Maybe the next day you throw it on salad with a delicious southwest dressing and your favorite toppings (avocado, tomatoes, corn, black beans). The great thing is you have minimum prep each day for your meals because the hard labor is already done.
I also get snacks prepared and ready to go in either zip lock bags that I re-use each week or Tupperware containers. This helps me to keep proper portions (if you eat cashews out of the jar you’ll eat 5 servings-ha), and also helps in case I’m on the go that I don’t over look grabbing something healthy and then fall into the fast food trap while I’m out and starving!
